Crusted Cheesy Eggplant

Ingredients
  • 3/4 kg potato, sliced 1/2-inch thick, with peel intact, soaked in water
  • 3/4 kg potato, sliced 1/2-inch thick, with peel intact, soaked in water  FOR THE BREADING
  • 1 cup breadcrumbs
  • 1/3 cup flour, all-purpose
  • 1/4 tsp salt
  • 2 cup oil, for deep-frying
  • 1 pouch DEL MONTE Sweet Style Spaghetti Sauce (250g)
  • 1 cup melting cheese, coarsely grated
  • 1/2 Tbsp oil, for greasing
  • 2 Tbsp parsley, roughly chopped
Preparation

1. Drain potatoes then pat dry with paper towels.Toss the potatoes with the breading ingredients in a resealable bag to coat the potatoes. Deep-fry until golden brown. Drain on paper towels.
2. In a pan, layer the potatoes, DEL MONTE Sweet Style Spaghetti Sauce and cheese.
3. Bake in preheated oven at 350F for 30 minutes. Top with parsley just before serving.

Tortang Monggo

Here's a creative way to enjoy healthy monggo!


Preparation Time

Ingredients
  • 1/3 cup monggo, green
  • 1 cup water
  • 1 cup alamang, fresh or dulong
  • 1 cup malunggay leaves
  • 1 pouch DEL MONTE Original Style Tomato Sauce (115g)
  • 1/2 cup flour, all-purpose
  • 1/4 cup onion, red, chopped
  • 3 pc egg, beaten
  • 1 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 cup oil, for frying
Preparation

1. Bring to boil then simmer monggo in water for 30 minutes or until monggo is cooked. Combine monggo with remaining ingredients, except oil. Mix thoroughly.
2. Fry every 2 tablespoons of mixture in hot oil. Cook until golden brown. Serve with DEL MONTE Chili Sauce or DEL MONTE Red Cane Vinegar.

Transform the humble eggplant into an impressive dish!


Ingredients
  • 650 g eggplant, approximately 10 pieces
  • 1/2 cup flour, all-purpose
  • 1 pc egg
  • 1/2 cup breadcrumbs
  • 2 cup oil
FOR THE TOPPING
  • 1/2 cup DEL MONTE Italian Style Spaghetti Sauce (250g)
  • 100 g bacon, fried until crumbled
  • 1/2 cup cheese spread
Preparation

1. Slice the eggplant with stem into 3 to 4 pieces lengthwise. Sprinkle with flour, then dip in egg. Coat with breadcrumbs.
2. Fry until just golden brown. Drain on paper towels to remove excess oil.
3. Top eggplant with DEL MONTE Italian Style Spaghetti Sauce. Sprinkle with bacon then drizzle with cheese spread. If desired, bake in oven toaster.
